Peach Muffins

Last week a large box showed up at our door, and turns out it was an amazing early birthday present for Lily!

All babies need stand mixers.

So, in honor of this amazing gift, we made some peach muffins! These are real, unhealthy and delicious muffins with butter and sugar and they turned out really well. The mixer is fantastic and the color is perfect.

Peach muffins

Batter:
2c. all-purpose flour
2/3c. sugar
1 tsp. baking soda
1/4 tsp. salt
1/2 c. butter
1-1/8c. milk
1 tsp vanilla
2 cups peaches, chopped (I used frozen)
1 egg

Topping:
1/2 cup turbinado sugar
1 tsp cinnamon
1/2 stick butter, softened
1/4 cup rolled oats


Mix dry ingredients in a large bowl. I used the whisk of my mixer to cut the butter into the flour. I switched to my flat paddle and then added milk, vanilla and egg and mixed until just combined. Fold in the peaches. Spoon batter into muffin cups. For the topping, mix the ingredients together and drop bits on top of the muffins and bake at 400 for 15 minutes. Then sprinkle the tops of the muffins with more turbinado and bake for an additional 3-5 minutes or until golden brown.

We gave Lily a whole muffin to play with and she couldn't believe her good luck!
