One More Disney Day 2012

Last week, for the first time ever, the Magic Kingdom was open for 24 hours straight in celebration of Leap Day. Of course, this was something we couldn't miss out on! We got a later start than we had originally planned on as a certain baby was extra fussy the night before, and then we got stuck in traffic for 2 hours. We still had plenty of time for the park though because they were open until 6AM!

We weren't exactly prepared for how busy it was but we had a a great time. Since we're able to go to frequently we weren't really rushing around trying to do things. We mainly hung out and enjoyed the atmosphere and talked with our friends who also thought it would be a a great idea to hang out in the MK all night long!

Peach Muffins

Last week a large box showed up at our door, and turns out it was an amazing early birthday present for Lily!

All babies need stand mixers.

So, in honor of this amazing gift, we made some peach muffins! These are real, unhealthy and delicious muffins with butter and sugar and they turned out really well. The mixer is fantastic and the color is perfect.

Banana muffins

We've made a few batches of muffins in the last week or so, with varying levels of success. I've been trying to perfect a "baby breakfast muffin" recipe and then freeze some so we'll have easy breakfasts and snacks for Lily for a while. I had decided on a recipe and got them in the oven when I realized I forgot to put the eggs in them, as I had been distracted by this person:

Fun with Avocado

Yesterday I realized that I had both an avocado and eggs, so I wanted to try something I saw Geoffrey Zakarian do on the Next Iron Chef a while back. His dish wasn't the most well received as I'm pretty sure he was supposed to be making ballpark food, but as our main critic currently eats just about anything in front of her, including paper and lizards, I figured it was time to give it a go. It's actually a quick meal for any time of day.

Welcome to Lily's new blog, Lunch with Lily! Lily is growing up so fast and we need to get focused on cooking real food for our best girl! So, in addition to documenting all the exciting things Lily is up to now, we're going to be exploring and inventing some healthy and organic toddler-friendly recipes and probably revisit some old favorites as well. This week I think we're going to start with some breakfast foods. Muffins are in our future!
