Banana muffins

We've made a few batches of muffins in the last week or so, with varying levels of success. I've been trying to perfect a "baby breakfast muffin" recipe and then freeze some so we'll have easy breakfasts and snacks for Lily for a while. I had decided on a recipe and got them in the oven when I realized I forgot to put the eggs in them, as I had been distracted by this person:


Actually, they came out ok but I imagine they would have been much better with the elusive eggs. Lils had a good time helping me cook them though.


Ok, so we made banana baby breakfast muffins, and they are essentially little banana bread muffins with no added sugar.


Your ingredients:

1 1/2 cups flour (we used whole wheat, next time I would probably just use all purpose)
1 tsp. baking powder
1/2 cup rolled oats
1/2 cup unsweetened shredded coconut
1/4 cup coconut oil
2 eggs 
4 extra ripe bananas
1/2 cup applesauce
1/2 cup apple juice
1 tsp vanilla
1tbsp cinnamon
1 tsp nutmeg

Preheat your oven to 350. Mash the bananas with a fork.


Set aside 1/4 cup your banana mash and feed it to the baby.


Now it's time to actually do some cooking.

Mix together all your dry ingredients. Add the eggs, vanilla, apple sauce, oil and banana and mix gently to combine. Try not to over mix. Spoon batter into muffin liners or greased muffin pan and bake at 350 for 15-20 minutes or until golden brown.



Lily had one for breakfast the next day and she was a fan even if I did forget the eggs!
